Come Over To The Foodie Side

Hasselback Potato Recipe

Potatoes to me are like blank canvases. They look and taste the way you make them, which is probably why everyone likes them. I don’t think I have ever met someone who doesn’t like some sort of potato dish.

These hasselback potatoes are a fun twist on baked potatoes. They look different and adventurous on your plate which is always a great thing when having people over.

Super easy and obviously really cheap to make, I mean hello they are taters, the cheap mans diet! You just can’t go wrong with these. I use whatever spices I have on hand to get the flavor I’m feeling and you can too. Feel free to use any spices you like instead of using what I suggest.

The potato is your canvas.  Let yourself be the artist for once!

Serving Size: 1-2 people; Under $5

What you’ll need

  • Cutting board
  • 2 spoons
  • Sharp knife
  • Baking sheet
  • Brush

RECIPE:

  • 1 Russet Potato
  • 1 tbsp. Olive Oil
  • 1 Clove of garlic – Chopped
  • Sprinkle of Chili Powder, Paprika, Salt & Pepper

Preheat oven to 375 degrees.

Rinse your potato very well and wipe using a paper towel. Place the potato on your cutting board in between two spoons running parallel to the potato.

Slice the potato as thin as you want the pieces to be, making sure you don’t go all the way through. This is why the spoons are there, they stop your knife from going straight through. Next, place the chopped garlic in between each slice of the potato.

Place the sliced potato onto your baking sheet, brush with olive oil and sprinkle with the chili powder, paprika salt and pepper. Place in the oven for 45 minutes or until they are soft enough to eat, yet have a perfect crunchy skin. mmm tasty!

Feel free to make one per guest or make a couple and have them pull off however many slices they would like.

  1. I saw something similar to this on Pinterest last night but it was called something Swedish with lots of butter. I think I’ll make this one tomorrow! I found your blog link on Vocalpoint.
