Hasselback Potato Recipe


Potatoes to me are like blank canvases. They look and taste the way you make them, which is probably why everyone likes them. I don’t think I have ever met someone who doesn’t like some sort of potato dish.

These hasselback potatoes are a fun twist on baked potatoes. They look different and adventurous on your plate which is always a great thing when having people over.

Super easy and obviously really cheap to make, I mean hello they are taters, the cheap mans diet! You just can’t go wrong with these. (more…)

Twice Cooked Brussels Sprouts w. Almonds Recipe


I’ve loved brussel sprouts ever since I was little. I know, weird that a child would LOVE them, but I did. My mom would even pack them in my lunch and I would eat them cold. If only more people in my life enjoyed them as much as I did it would make my life a little easier. I have slowly started to draw people over to the brussel side, but it’s been a challenge.

I tend to eat brussels plain – but still tasty – by roasting them with a little salt, pepper and garlic. In an attempt to up my brussels repertoire, I created this recipe which adds another dimension of flavor to my usual method. (more…)

Smoked String Beans


Constantly coming up with new side dishes is almost like a part time job. I find it difficult to spice up my side dish repertoire when I’m dealing with selective veggie eaters.  This is why I decided I no longer care about who eats what. I am now making whatever I feel like making and if they don’t like it they won’t eat it. I have also discovered that by doing this people end up eating, and liking, something they don’t normally eat because it’s their only option and therefore they are forced to try it. (more…)

Grilled Artichokes


Artichokes were a staple in my house growing up. Slowly over time they started to evolve. It started with steamed artichokes dipped in melted butter, to stuffed artichokes and then finally grilled artichokes.

We were always grilling fanatics. I remember our grill was out of commission for a month once and I almost went into a deep depression. So clearly I love anything grilled.

Grilled artichokes are great for a side dish or even better as an appetizer. Often times when you are grilling for a group of people they are waiting around for their round of food to come up. Instead of having them wait around eating chips and dip, give them some grilled artichokes to munch on and they will forget what they are even waiting for. (more…)
