White Wine & Garlic Broccoli Recipe

White wine and garlic, if these two things aren’t in your cooking repertoire they should be. These two ingredients are usually always on hand and ALWAYS taste good together. Whether they are paired together in pasta dishes, poultry, fish or in this case veggies, it’s a safe bet that the food will taste light and fantastic. (more…)

Hasselback Potato Recipe

Potatoes to me are like blank canvases. They look and taste the way you make them, which is probably why everyone likes them. I don’t think I have ever met someone who doesn’t like some sort of potato dish.

These hasselback potatoes are a fun twist on baked potatoes. They look different and adventurous on your plate which is always a great thing when having people over.

Super easy and obviously really cheap to make, I mean hello they are taters, the cheap mans diet! You just can’t go wrong with these. (more…)

Twice Cooked Brussels Sprouts w. Almonds Recipe

I’ve loved brussel sprouts ever since I was little. I know, weird that a child would LOVE them, but I did. My mom would even pack them in my lunch and I would eat them cold. If only more people in my life enjoyed them as much as I did it would make my life a little easier. I have slowly started to draw people over to the brussel side, but it’s been a challenge.

I tend to eat brussels plain – but still tasty – by roasting them with a little salt, pepper and garlic. In an attempt to up my brussels repertoire, I created this recipe which adds another dimension of flavor to my usual method. (more…)

Mango Goat Cheese Salad w. Mustard Vinaigrette Dressing Recipe

This is one of my all-time favorite salads…. EVER.  It might be because it includes mangos and goat cheese, two of my top 5 things to eat, but I swear this salad is fantastic and a crowd pleasure.

Something about the sweetness of the mango combined with the smooth soft flavor of the cheese and then topped with the tartness of the dressing just creates this explosion of yummy goodness in your belly. (more…)

Italian Stuffed Roasted Red Peppers Recipe

Roasting my peppers burnt out my propane tank, but look how great they came out:

Besides that, it’s also super scrumptious. This is a great appetizer or a side dish for Italian dinners with its ricotta parsley yumtastic filling. (more…)

Pomegranate & Fig Arugula Salad w. Cinnamon Honey Balsamic Dressing

I have always loved homemade salad dressings. There is something about store-bought dressings that just aren’t for me. Not only are store-bought dressings mostly filled with calories, they are also filled with typical flavors. When you make dressings yourself usually they have fresher, lighter flavors. You can also create what the outcome will be. If you like your dressings less sweet, more vinegary or saltastic here is your chance to do so.

I came up with this salad by roaming the food store, which I often do. Walking up and down the aisles of a supermarket or farmers market will give your brain and your belly inspiration. This is why I hate rushing when it’s time for my weekly food shopping. I want to take my time and walk up every aisle and look really hard to find something new and fun. I know people who walk into the supermarket with their list and walk out with everything on it and nothing extra. I am not this person. I don’t have a list the majority of the time. I have the food talk to me and tell me what I should make (trust me I know I sound a little foodcookoo). Sometimes I wish it would tell me to put down the stone ground mustard because you already have three jars at home. (more…)

Smoked String Beans

Constantly coming up with new side dishes is almost like a part time job. I find it difficult to spice up my side dish repertoire when I’m dealing with selective veggie eaters.  This is why I decided I no longer care about who eats what. I am now making whatever I feel like making and if they don’t like it they won’t eat it. I have also discovered that by doing this people end up eating, and liking, something they don’t normally eat because it’s their only option and therefore they are forced to try it. (more…)
