Why Go Out To Brunch?

I was originally going to go out for Brunch, but then I looked outside and realized it was so gloomy I just did not want to leave. Instead, I got up in my comfy sweats and stood in front of my fridge and scrounged around and came up with what I think was a delicious breakfast:

Baked french toast, scrambled egg whites with goat cheese, mozzarella and fresh thyme, and fresh fruit.

What made the french toast so special is that I used cinnamon swirl bread, so it was a double dose of cinnamon goodness.

French Toast Directions:

6 slices of cinnamon swirl bread

2 eggs

2 tsp. vanilla extract

1 tablespoon cinnamon

*combine all the ingredients in a glass baking dish. Lay each slice in the bread and let soak for a minute or two. Then flip the bread, let it soak a little bit and place in the oven at 350 degrees for 5-8 minutes or until its at your desired crispness.
Scrambled Eggs Directions:

6 Egg Whites

1 goat cheese medallion

Sprinkle of Mozzarella

1 tsp. Garlic powder

4 sprigs of fresh thyme (stems removed)

salt and pepper to taste

*Whisk all ingredients in a bowl. Add to a sprayed pan and mix with a spatula until all the eggs are dry.
